Bitter orange peels, are the outer, colored parts of the bitter orange, scientifically known as Citrus aurantium. These peels are distinct from the peels of sweet oranges, which are more commonly used for food purposes.

During the months of September and October each year, the farmers pick bitter oranges. These bitter oranges are peeled to come up with barks which put in direct sunlight for 3 to 4 days. Then they are sorted and crushed. This product is required by beverage producers as well as by spice traders.
